Gab Ruiz and her team have been building a little piece of Mexico in Glenorchy through Casa Jaguar. After coming through Startup Booster in 2024 and receiving an SQL Microgrant, Gab has grown the restaurant into a place recognised by the Mexican authorities for its authentic gastronomy. In August, the Mexican Ambassador came to Glenorchy to present that recognition in person.
